We have a Boy Scout

Wow. I knew the boys were going to grow up and everything but it seems to be happening really fast. Last night Derek bridged into boy scouts. He is with Troop 234. That is the same troop that one of his good friends is in. I would show you pictures but i could not take any because i am a dunce and forgot to put in the battery after i charged it! Doh! *smacking forehead* Lynn had her camera and she had someone take picture of Derek to and also the new troop assistant took several picture so at some point i will get those and post them.

Easter Egg Hunt

This year's Easter was quiet. We stayed close to home and enjoyed the warm weather. For dinner instead of a roast, which is usually more then we can eat,I made chonco. It is a dish from Peru and has pork in at.

Ahhh Finally i have one ruffled glove done. I cast on the second one this afternoon. I am going to work on it hopefully until it is done. I think i I have worked out all the kinks in the pattern that i did not understand so this one should knit up more smoothly.

Spicy veg. peanut stew

I made this yummy stew earlier this week.

1 T olive oil
1 small onion, or 1/4 cup, chopped
1 celery stalk, chop
1 tsp powdered ginger
1 clove garlic. minced
1 small potato, peeled and cubed
1 small yam, cubed
1/2 can diced tomato with juice
2 cup chop cauliflower
2-3 T peanut butter

Heat oil in pan saute onion and celery for 3 min. Add ginger and garlic, saute 3 min. Add potato and tomato, cook 5 min. Stir in 2 cups water, season with salt and pepper. Simmer 10 min. Add yams and cauliflower, cook 15 min. Add peanut butter, cook 4 min. Serve over rice. This makes about 3 servings.

Yummy Salad

I found a really good bean salad from Cooking Light.
Mango and Black Bean Salad
1 1/2 cup chopped mango
1 cup thin sliced green onion (I used half red onion half green onion)
1/2 cup wild rice, cooked (I used brown)
3 T chopped cilantro (i used one cube from TJ's)
2 T salsa
2 T lime juice
2 T olive oil (I used only 1 T)
3/4 t salt
1/4 t black pepper
1 15oz. can black beans, drained and rinsed

Mix all gently and chill. Serves 6. Serving is 2/3 cup and it is 167 Calories per serving.
*I also added green pepper thinly sliced because i just happened to have tons in the fridge. My changes make the calorie count different but i think it would be close.
They said to serve it with Pork but i made some fish. We had it for dinner. I think it would be good on mixed baby greens or spinach.

Yesterday I also made a white bean spread and put it in a wheat pita with spinach and cuc's. I sprinkled a bit of feta and calamata olives on top. That was really good to ;)

Just had to swim

Even though it was a warm day (73) the pool is really cold. It does not really warm up until the beginning of May. I just could not convince the boys that the water would be to cold. I finally let them get their suits on. I can not tell you how funny it was watching them get into the pool.

It totally made my day :)
